How much chia to replace an egg?

Reader Donna sent in this question:

An article says I can replace eggs or fats in baking with chia gel. What is the ratio? Replace 1cup butter with 1 cup chia? How much chia to replace an egg? Thank you!

Are you also wondering, can chia gel work as substitute for eggs? Hopefully this post will help you too.

Here’s my answer:

Donna,

To replace an egg, you will use chia gel. To make this gel, mix 1 tablespoon of the seeds with 1/4 cup water.

I like to put the seeds and water together into a glass jar with a tight-fitting lid and shake well for about 20 seconds. After about a minute give the jar another good shake. You can store the jar in the fridge and it keeps for up to 2 weeks.

Use 1/4 cup of chia gel as a substitute for 1 egg.

Hope this helps! Thanks for the great question,

Alex
